INGREDIENTS
- 325g Co-op Mediterranean style vegetable roasting tray
- 1 tbsp oil
- 1 aubergine, chopped
- 1 garlic clove, chopped
- 400g can Co-op Honest Value chopped tomatoes
- 400g can Co-op butter beans
METHOD
- Roast 325g Co-op Mediterranean style vegetable roasting tray according to the pack instructions
- Meanwhile, heat 1 tbsp oil from your storecupboard in a frying pan over a medium-high heat
- Cook 1 aubergine, chopped, for 10 mins, until golden
- Add 1 garlic clove, chopped, and cook for 1 minute, then pour in a 400g can Co-op Honest Value chopped tomatoes and 200ml water
- Drain a 400g can Co-op butter beans, then gently mash half
- Stir all the beans into the pan, then simmer, partially covered, for 10 mins
- Once the roasted veg is cooked, add it to the pan and cook for 5 mins more Season to taste and serve
