Mediterranean-style vegetable stew (VG)

INGREDIENTS

  • 325g Co-op Mediterranean style vegetable roasting tray
  • 1 tbsp oil
  • 1 aubergine, chopped
  • 1 garlic clove, chopped
  • 400g can Co-op Honest Value chopped tomatoes
  • 400g can Co-op butter beans

METHOD

  1. Roast 325g Co-op Mediterranean style vegetable roasting tray according to the pack instructions
  2. Meanwhile, heat 1 tbsp oil from your storecupboard in a frying pan over a medium-high heat
  3. Cook 1 aubergine, chopped, for 10 mins, until golden
  4. Add 1 garlic clove, chopped, and cook for 1 minute, then pour in a 400g can Co-op Honest Value chopped tomatoes and 200ml water
  5. Drain a 400g can Co-op butter beans, then gently mash half
  6. Stir all the beans into the pan, then simmer, partially covered, for 10 mins
  7. Once the roasted veg is cooked, add it to the pan and cook for 5 mins more Season to taste and serve
