Zesty, speedy and super-simple, this stir fry uses just five ingredients
INGREDIENTS
- 1 tbsp vegetable oil
- 250g Co-op British pork loin steaks
- Zest and juice of 1 orange
- 120g pack Co-op trimmed mangetout
- 250g pack Co-op Chinese egg rice
- 3 Co-op trimmed salad onions, sliced
METHOD
- Heat the oil in a large frying pan and add the pork, trimmed of fat and cut into bite-sized pieces
- Stir fry over a high heat until evenly browned, then add the orange juice and mangetout, and cook for 2-3 mins more, until the meat is cooked through
- Remove the pork and mangetout with a slotted spoon and keep warm while you cook the rice
- Add the rice to the pan, along with 2 tbsp cold water, and stir fry for around 2 mins, until piping hot, then stir in the orange zest
- Divide between two plates, top with the pork and mangetout, then scatter over the salad onions
